Serves 8
1 lb Fresh green beans
8 cherry tomatoes, halved
1/3 cup water
1/3 cup cider vinegar
¾ tsp dill seeds
½ tsp sugar
¼ tsp salt
¼ tsp ground red pepper
2 cloves garlic sliced
Directions
1. Wash beans; trim ends, and remove string from beans. Cut beans into 1 ½ inch pieces. Arrange beans in vegetable steamer over boiling water. Cover and stem 3-5 minutes or until beans are crisp-tender. Plunge steamed beans into ice water; drain well.
2. Place beans and cherry tomato halves in a shallow baking dish. Combine water and remaining ingredients in a small saucepan; bring mixture to a boil. Pour vinegar mixture over bean mixture; toss gently. Cover and marinate in refrigerator at least 8 hours, stirring occasionally.
3. Serve using a slotted spoon.
