Stuffed Chicken Caprese

 

Serves 4-(Maryanne Kopec McLafferty)

4 boneless chicken breast

4 slices mozzarella cheese

8 large fresh Italian basil leaves

¼ tsp salt

¼ pepper

2 tsp olive oil

2 cups cherry tomatoes

½ cup torn fresh Italian Basil

Directions

1. With a small knife, make a slit in chicken to create a pocket; don’t cut all the way through. Stuff one cheese slice, and two large basil leaves in pocket and secure with toothpicks. Sprinkle with salt and pepper.

2. Heat large skillet until hot, add in oil and cook chicken for five to seven minutes turning once. Scatter tomatoes over chicken reduce heat to medium low cover pan, and cook for five more minutes.

3. When done sprinkle with salt, pepper, and torn basil. Serve over your favorite rice.
